Pumpkin, Pecan, and Maple Pie Oats

It seems to me that my love for oats and pumpkin have collided… into one meal.. and it would have to be the most amazing meal of the day,,,, yep, Breakfast… This is why I go to bed early as I know I am only 6 hours away from pure deliciousness…   I have recently found an unimaginable love for pumpkin… (the overnight oats have been for years)  and am wanting you all to see how it is pretty good for you too,,, I am sure that I should have turned a light shade of amber or at least kept the Pumpkin Farmers in a job.

Pumpkin, Pecan and Maple Pie Oats

 

Base recipe

Jar or bowl

½ cup rolled oats

2 tsp chia seeds

1 tsp sunflower seeds

2 tsp pumpkin seeds

1/2 tsp cinnamon

Scoop vanilla protein powder (optional)

Filtered water, milk or coconut milk

 

2 tablespoons Baked pumpkin mashed and mixed with a little plain Greek yoghurt

2 pecans on top with a little squirt of sugar free maple syrup.

Place all of the base recipe in a jar or small bowl.  Put filtered water or milk in jar to cover oats.

Leave in fridge overnight.

Put a little of the mashed pumpkin and yoghurt on top of the oats.  Place the 2 pecans on top and squirt a little sugar free maple syrup on top.

OMG… !!!  You can’t tell me this is not yum..!!
